Onion & Cardamom Confit

1 kg onions – peeled and sliced
2 apples – cored, peeled and diced

dash of olive-oil
small glass apple cider vinegar

1 tbsp mustard seeds
6 green cardamom pods – remove pods & lightly crush seeds
1 thumb ginger, finely chopped
1 cm Turmeric, grated
400g sugar


 

Heat a thick-bottomed pan on low and add the mustard seeds and cardamom. Allow to heat for 5-10 minutes and add olive-oil, onionsĀ andĀ apples. When the onions have started to soften and go transcluscent, stir in turmeric for about 10 minutes. Add cider and stir in. Add ginger and stir in. Finally, add sugar, and allow to reduce on low heat until the mixture has caramelised. The onion should be soft and translucent when they are ready!
